This Roaster is NOT the REAL Calphalon Unison (which is made in Ohio) but a cheap offshore knockoff. You will search in vain among the package, literature, packing slip and box for "Made in the USA" because it isn't. (Lately China is "forgetting" to list the country of origin on stuff - have you noticed that?) If your Unison box says "Special Value" it is an imitation, and it has so called "slide" nonstick, NOT SEAR - - if you don't care, this is a good pan.

I've heard the great reputation of this Calphalon One nonstick 13-inch deep skillet with glass lid and bought this before christmas at $100. The skillet looks well built, and it is very balanced while I hold it in hand. I always use wood or bamboo utensil in cooking and use its soft side of sponge for washing. however, in less than one month, I've seen several permanent scratches in the skillet, which totally disappoints me. I would have not bought this skillet if I have known the non-stick surface is as fragile as other brands. So my opinion to this skillet: if you are looking for a durable non-stick skillet, don't buy this one for its appearance. Anyone who has good experience with durable nonstick skillet, please feel free to make recommendation. Thanks.

My wife and I got this set of pans for our wedding 5 years ago. Initially we were blown away by how much better they are than the average Teflon non-stick pans. We don't eat out often and we have been overall delighted with the set.



The pans that we use the most, however, after 5 years were starting to stick to food and were generally not working well. Since we like the set so much we went to bed bad and beyond to buy a new replacement pan for over $100. In the store, the salesperson overheard us talking, confirmed that we got the set through our registry with them and handed us a brand new pot and we walked out the door. No forms. No hassle. Easy.



In review, excellent pans but they won't last you indefinitely. However, who cares when you can waltz into a store that sells them and return them with relatively little hassle.

I'm still hopeful that the coating isn't as poisonous as the regular teflon pans.



As other reviews have said, you can't soak this, scrub this, dish-wash this, or anything else fun. And who hasn't let a pan sit overnight with some water in it when you finished dinner late? Bang, the warranty is void and you have some permanent scratches on the pan (apparently water can loosen the finish? not very 'permanent' by my book then).



I don't know what else to suggest yet :( We got these for our wedding and are shopping for new ones - expensive for only a year or two of work!

I bought these pans a couple weeks ago after A LOT of searching and investigating different brands. I was replacing an 10+ year old t-fal set as well as misc. Cuisanart pots & pans. I was willing to pay more for a good set, but I am a bargain hunter by nature. I had one Calphalon omelet pan I really liked, so I ended up buying this set. I investigated All-clad, Circulon, Cuisanart, Anolon, and Calphalon. My previous cuisanart nonsticks were flaking after a couple years of use. The main reason I settled on this set was the solidness and weightiness of the pans. They are heavy and sturdy. If you are looking for a lightweight set, this is not it. I did not purchase my set from Amazon. Several other sites were the same price or a little less with the addition of free pans or baking sets with your purchase (which Amazon did not offer). You can find good deals if you do a little internet searching. I also was trying to decide between the hard anodized and nonstick. If you want very little cleaning, go with nonstick. Hard anodized need a little elbow grease and food does stick at times. You have to use more fat for cooking. These pans are great because the inside is coated, but the rest of the pan is hard anodized, so even if you get stuff on noncoated parts, its easier to clean off. The handles are easy to handle. They get warm midway up, but most people use the middle & latter half for handling, so this is not an issue. I have cooked cheesy dishes, meats, chicken, eggs, pasta & all came out easily. They also heat evenly and I feel I've been able to use lower settings, so they must conduct heat pretty well. The only reason I gave 4 stars was due to the rivets. They are in the inside of the pans and are obviously not nonstick. If you cook sticky things like cheese, tomato sauces, etc it will stick to them. It can take some work at times to get that area clean all around the rivets. The large stock pot is not as big as I would have thought. It is taller, instead of wider to accomodate the 8 quarts. The lids are nice and heavy, so they don't slip with steam and you can watch your cooking without opening the pan or pot. In general this is a good set. Just shop around for pricing. Internet auction sites also have them pretty cheap and unused with free shipping. I spent under $250 shipped with the buy it now option and got 18% cashback by using "Live search" (MSN search engine available to everyone). I think the "One" line from Calphalon is its best since it incorporates nonstick and hard anodized technology. Even if you scratched the pan, you would have hard anodized underneath, so your stickiness would be minimal. I use only wooden or plastic utensils in this set. I've only had this a short while, but so far, its worth it, especially at the price I ended up with. Shop around & get it, you'll be pleased.

I purchased this cookware set five years ago. Initially, I was very happy with it. The handles stay cool even with high temps and the food cooked easily without sticking. After frequent use, the nonstick layer started peeling off the pans and I would find flakes of Teflon in my food. I always use wooden or plastic cooking utensils and never metal.



Do not put these in the dishwasher or your warranty will be void. I don't do it often but they have been in the dishwasher and even though Calphalon said that wasn't the cause of the problem, they won't replace any of my pans. I won't purchase anything from this company again.

I received the set 4 or 5 years ago for Christmas. I really like the way they cook and haven't had problems with food sticking to the pan. They clean up easily. However as others here have written, the nonstick finish does wear off after a while no matter how carefully you wash and store them. So I Googled the customer service address and you can return your pan to the company and they send you a new one. I've already returned 2 pans and have another one or two that will have to be returned sometime in the next 6 months. So, yeah the initial investment is high, but where else can you get a brand new pan every few years with no questions asked?

I got this 10 piece set for my wedding 3 years ago, and have used them nearly every night since.



PROS: They are extremely durable, I've never had problems with warping even when going from hot to cold temperatures, which I now know you shouldn't do.

They do go in the oven which is nice when making one-pan dishes.

They are really easy to clean, just soak for a few minutes and wash with a green scrubby pad.

They are partially non-stick. This could be a pro or con. When using the pans at higher temperatures food tends to stick, but I feel this is balanced out with how easy they clean. They definitely stick less than my other aluminum pan, and are a lot easier to clean.

They seem to distribute the heat evenly through the pan/pot, and maintain their temperature well. When I set the stove temperature, the pans will heat up to a certain point. They don't seem to get too hot and don't require constant stove adjustments to maintain a temperature.



CONS: The handles do get a bit warm when cooking on the stove, the ends are never too hot to touch but you can't grab the handle too close to the pan/pot. The lid's also get hot and require potholders.

The pans don't brown. Well, they do brown, but when they brown, all the brown sticks to the pan. I have a cheap aluminum pan that I use for things like hashbrowns and other things that I need a good browning on.



Overall, if I could go back and register for a different set of pans, I would not. I wanted a set of pans that would last me 30+ years and still look good and function well. After 3 years these pans still clean up to the same condition I purchased them. They are really great for the everyday family cook such as myself. I'm not a professional, so I'm sure there are better pans out there, but these suit me just great.

I was so excited to get the 10-piece set. Then, to much major disappointment, everything sticks to the frying pans! And DO NOT blame the cook. I'm so tired of other reviewers and Calphalon blaming the customer. That's an old marketing ploy to make customers feel inadequate, and I'm not buying it.



Yes, I freaking know this is not nonstick, so shut up. Yes, I have followed the directions to a tea each and every time I've used the pans: Heat the pan up to the necessary cooking temperature. Don't try to make it heat up faster, just wait. Then, and only then, put oil or butter in the pan. Then cook.



One poster said to never used aerosol cooking sprays. Well, Calphalon should be the one to say that if it's the case. According to their directions, cooking spray is okay as long as you spray the food prior to placing it on the pan and do not spray the pan directly.



I know how to cook. I know how to read. I know how to follow directions and I have.



I thought perhaps I didn't have enough oil (which is bad since I'm already trying to control my fat intake). So, I put more oil in the pan this morning for my eggs (cause I don't personally like stuck-on-pan eggs ... and just forget omelets). IT STILL STUCK! I have NEVER owned a pan of any kind that stuck with that much oil. This is crazy. What is making it stick? There's something wrong here.



It was highly recommended by the guy at Bed, Bath, and Beyond, but I have a feeling he would have highly recommended anything we asked him about just to get us out of his hair or to get us to buy something.



So, I guess I'll take the set back and exchange it for the Unison. This is disappointing because the Unison set doesn't even come with a 12" pan, which I need and it already cost $100 more.



OR, perhaps, I won't get Calphalon. All of my bakeware is Analon and the quality is so amazing.

This set is perfect for any family that spends a lot of time in the kicthen and is definitly worth the investment. All the pieces are sturdy, cook evenly, and yes while they are technically not non-stick, all of our food, including eggs, have cooked perfectly. I read some of the other reviews concerned about damaged pans becuase of poor packaging. However, I talked to a Calphalon rep and they said that that problem had been resolved. Sure enough, our pans came wrapped safely in plastic and seperated by cardboard. No nicks or dents. You do need to follow recommended directions for cooking (i.e., heat up pans before adding oil) and keep your pans clean for optimal cooking. But, if you are a cooking enthusiast, there really is nothing like have a quality set of cookware without the worry of teflon flakes in your food. And with the lifetime warrenty and responsive customer service to top it off, this set has been wonderful.

I am chef trained at the Culinary Institute of America. When I got married over a year ago I put these pans on my registry excited to finally have a really good set of pans like my parents. I was looking for the perfect pan that combines restaurant quality with home ease. Overall, they have been a big dissapointment. The 12 fry pan lost the flat bottom after it's first use. Food does stick to the bottom of the pans. I have learned if you leave the food, like a piece of chicken, in the pan till it's almost burn point, then, and only then, does it become "non stick." I will use these pans for a few years and then trade in to Calphalon under the warranty to something different.

These pans heat unevenly to the point where they simultaneously burn and undercook food. We have not had this problem with our older Calphalon or All-Clad pans. The uneven heat distribution is undoubtedly related to the thickness of the aluminum. The bottom of the pans are 3.9mm thick. Our older Calphalon pans are 5.5mm thick--40% thicker! Indeed the pans feel lightweight and cheap, similar to non-stick pans you buy at the local supermarket. I suggest you avoid these pans and either buy a cheaper item of similar quality or hunt for better quality.



This review is based on 6 weeks experience with these pans.

Bought this $40 9" chef's skillet about 4 years ago mostly for breakfast eggs. first time was a disaster; cooking AND clean-up. drug it out 2 times since to give it another try. same issues. heat properly, use a little oil -- still burns and sticks and is a huge pain to clean. what a waste of money. i've done a little research and find that Calphalon will not refund. cheapskates.

This line from calphalon may frustrate you unless you learn the secret.



These pans will not stick if used properly.



You must preheat them properly. They must also not be too hot.



You also must use some sort of fat or oil if you're frying something with low moisture.



Once you learn the secret, you will love these pans.



The secret here is to let your food cook. Stop molesting your food like you do with a teflon pan.



Once cooked, the food will not stick. You can then flip eggs and other such foods with little problem.



If you don't preheat and you try to molest your food it will stick horribly and turn into a brown mess.

This is a great saute pan, just love it. There's only 2 of us in this household and its perfect for fixing small portions of vegetables (like green beans, my husband's favorite) and fried rice, italian rice, and great for fixing one egg. Good nonstick surface and was surprised since its the new surface Calphalon has on their pans, but it works great, maybe better than the surface on Calphalon One pots and pans. Remember its a saute pan and not a 12 inch monster. But does a really good job on carmelized onions.

This is a perfect tool for preparing single serving meals.

This pan has the perfect shape for stir fry, pan fry, boiling pasta etc.

It's about 80% non-stick so cleaning is still pretty easy, you just won't be able to wipe it clean like a teflon coated pan.

It's not dishwasher safe but that's ok since we use it for single serving cooking we hand wash it right away to have it available at all times.

And... it's made in good old USA, Ohio. It's one of the few items in our home that's not made in China.

I was given a variety of Calphalon One series cookware for the holidays (not as a set though). I have 2 of the 12 inch non-stick skillets which I am rather disappointed with. The non-stick coating is flaking off horribly despite the claims that you can use metal utensils with it. However, this pan is obviously made using a different non-stick process. The coating looks very dull, like gun metal. This, I believe is the actual infused-anodized "new" coating that everyone raves over. However, be aware that not all Calphalon One series pans use this coating.



That being said, This pan is truly wonderful. The non-stick coating feels almost slippery when dry and perfectly smooth (like glass). This coating is indestructible. My spouse has actually banged (forcefully) on the surface using metal tools (to my horror) without damaging the surface. Eggs and omlettes release from the pan effortlessly. Even after searing meats or fish, I can wipe off the hardest sticking pieces of food with just the touch of my finger (after it's cooled of course). However, cleaning around the rivets requires a sponge and can be a bit annoying.



Heat distribution is even and well controlled (I use this pan to make sauces). The handle, although metal, never heat above room temperature. However, if you use this pan in the broiler, the handle will become red hot and take a long time to cool.



Sadly, Only this pan and I believe the saucepan and omlette pan, use this coating. I definitely do not recommend any of the other Calphalon One pans for issues discussed above.

Excellent construction. The non stick surface is very good, although not as smooth as our older Calphalon 10 inch non stick. It doesn't seem to matter, nothing sticks to it and clean up is a snap. The handle does not get hot while cooking which is a nice touch.



My only concern would be the lid, which is made of glass. It works fine and it's nice to see the food simmering away under it, until condensation clouds it up. But mostly, I worry about it breaking at some point as I both my wife and I are rather clumsy.



Otherwise, an excellent choice at an excellent price. I would recommend it.

I have owned an entire set of Calphlon One cookware for years. Originally we received a set of lifetime warranty Calphlon cookware for out wedding in 1995.



After about 7 years the pans were anything but non stick so we brought them back figuring we would get a new set due to the warranty. Well since they didn't make that style anymore we received Calphalon One and still had to pay about 50% of the retail price..



Anyway, that was about 7 years ago and I'm now so fed up with food sticking on these pans that I'm looking for a new set.



I just cooked 3 eggs on the 8" fry pan..heated it up using med heat, sprayed with some light oil, them put the eggs in..I am now soaking the pan so I can clean it because it's stuck all over it.

I will say the pans do still look good but the performance is very disappointing and not sure why they can claim they're non stick.

I don't usually buy "brands," but after trying out various pans over the years, I have found that Calphalon is one of those rare "names you can trust." At one time, I had a full set but those left years ago with an ex-girlfriend when we broke up, so I have been replacing them as I can.



This "Calphalon One Nonstick 12-Inch Covered Fry Pan" is available at a really good price, and is a high-performance and versatile frying pan. I am completely satisfied with the purchase.



Sadly, my apartment doesn't come with a fancy gas range, and my electric burners have been a challenge to overcome with cooking. They always heat up one side more than the other, and I am constantly rotating the pan to get even cooking. This Calphalon pan heats evenly, and while I still have to do a little creative spinning it is not nearly to the extent I did with my previous cheap frying pan.



The nonstick coating is a dream as well. No matter what I am cooking, meat, veg or fish, it just slides off the pan easy as you please. While I am aware that nonstick coating will eventually wear off, it is nice to have the lifetime guarantee that comes with Calphalon pans. In a few years I can just box up this pan and send it back for a new one.



The glass lid is a nice bonus, and the reason why I chose this pan in particular. It is nice and heavy, so I don't have to worry so much about it breaking, and I can see inside while my creations are cooking. Having a 12-inch surface area insures that I can put a lot in there as well, which is appreciated when I am cooking for a party.

Purchased 4 items of Calphalon Unison cookware, Used them just a few times and now I'm addicted. I now own the complete offering of Calphalon Unison cookware, including Utensils, Towels and Pot Holders. What a difference good cookware can do for your cooking. Also save on the amount of cookware you use. I seared a small roast on the stove top, than put it in the oven in the same pot. Also made homemade gravy (sauce) in the 8 quart stock pot, had it simmering for over 6 hours and there was no burnt sauce on the bottom of the pot. Clean up is a breeze, alittle Dawn dish detergent and a Dobie pad a couple a swirls around the inside and the outside of the Pan/Pot/Lid, rince it off, towel dry and back into the cabinet. They are also dishwasher safe. I am so glad I decided to go with the Calphalon Unison. If you are looking for a good set of cookware, don't look any further.

However, I am reading more and more bad things about the dangers of non-stick finished pans. If I had done more research I would have just gone with the stainless steel. Alas.

I purchased my Calphalon Contemporary set about a month ago, and I'm very impressed. So far, NOTHING seems to stick to these pans! I've even accidentally burned a few dishes (they require less heat that I'm used to), and not even the burned portions stuck to the pans. Clean-up is a breeze. The Teflon is holding up very well, and has proven to be resistant to scratches. The set is very attractive and the feel of it is great - not too heavy, not too light. Being able to go from stove top to oven, is also a great plus. I also purchased the "grill" pan, and I'm very happy with it as well. I'd recommend this set without reservations.

I registered for the Calphalon Contemporary Nonstick 10pc set (plus an extra dutch oven in this line) for my wedding 2 1/2 years ago. It was a pricey set--the kind that I wouldn't buy for myself, but registered for, hoping that it would be a durable set that would last my husband and I a long time.



Well, within a year, the two frying pans began to peel their Teflon coating. Now, 2 1/2 years later, 4 out of 6 of the pans I got are shedding their Teflon. I was responsible with them--NEVER put them in the dishwasher, and ONLY used nylon/silicone tools to cook with or clean them.



When I contacted Calphalon, they would "consider" replacing them if I paid to ship the affected pans to them. Even then, I wouldn't get a refund or be able to exchange them for a stainless steel pan in their line, but a replacement of the same pans. We decided to just go out and buy a stainless steel set. We didn't feel like paying a fortune to ship them our pans, just to recieve the same ones in return.



Pros:

Great look, easy to clean.



Cons:

A $450+ set with a Teflon coating that only lasts 1-2 years, regardless of how well you take care of them.

I bought this set of cookware a couple years ago and haven't regret it yet. The pans are all holding up well. Yes, wear comes with use, but the quality is certainly revealed. These pans clean up EASY, no scrubbing needed. There are some minor stirring marks, but the material has not peeled or chipped. I highly recommend these pans, they make a great mid-line product.
